Obtained from Albert at the Shipyard, the Ice Breaker enhancement allows you to access areas to the North of the map past a barrier of Ice. It’s in this area that you can find towns where merchants have special items for sale, and the town of Nordweiler’s merchant will have Chicken on hand that you can buy at most anytime.
To that end, all you really need to do is head to the Shipyard and upgrade your ship with the Ice Breaker ability and then head North past the Ice Barrier to Nordweiler, located at -3 x and 185 y. From there, you can disembark into the town and grab some Chicken, rinsing and repeating the process as many times as you need to amass a decent stock of the poultry food stuff.

As for what you can do with Chicken in Spiritfarer, the answer is not much.
While Chicken is a decent ingredient for use in cooking dishes to keep your Spirits well-fed, its main use will be for completing special requests your Spirits may make to progress their questlines.
